When I lived in Europe, I would spend my summers in Italy—where they had fresh EVOO in abundance. When I came home, I discover that most "extra virgin" olive oils are phonies: diluted, chemically altered, and falsely labeled. My purpose in starting BACI Kitchen was to share the pleasures of authentic, Italian-grown EVOO with family and friends—to help more people create accessible, healthy habits for themselves and their families over the long-term.

Using EVOO is a simple, tasty way to improve your health for the better. The reason I became so interested in the power of EVOO is because of one simple word: polyphenolsWhat are polyphenolsPolyphenols are a group of plant-based chemicals that are found in foods like Extra Virgin Olive Oil. They are rich in antioxidants, which play two important roles in long-term health:

(1) Good for longevity: polyphenols are proven to fight against age-related diseases like heart disease, high blood pressure, and even some cancers.  Polyphenols do this by fighting against oxidative stress in the body.

(2) Reduce inflammation: EVOO specifically contains a certain phenol compound called oleocanthal, which acts similar to ibuprofen in the body. Reducing inflammation is largely connected to protecting the body against a variety of diseases.

The most important aspect of leveraging polyphenol's power is by being consistent in incorporating it into your diet. Research shows that using 2-3 tablespoons of EVOO a day is enough to gain these health benefits.
