WARM BRUSSEL SPROUTS SALAD WITH LEMON MUSTARD SAUCE

Impress your guests with this delicious, nutritious brussels sprout salad. It has layers of flavor from warm sautéed brussels sprouts, sweet apples, dried cherries, a little bit of salty bacon and, of course, our award-winning Lemon Mustard sauce.

INGREDIENTS:

2 cups brussels sprouts, cut into 1/2-inch slices
3 bacon slices, cut into 2-inch pieces (add more if desired)
1 apple, cut into small pieces or slices
3-4 cups arugula
1/3 cup dried cherries
1 tablespoon BACI Kitchen EVOO
BACI Kitchen Lemon Mustard vinaigrette, to taste
Kosher salt and pepper to taste

INSTRUCTIONS: 

1. Cook bacon pieces in a skillet without any oil until brown. Remove bacon and dry off excess grease by laying on plate lined with paper towels.

2. Carefully discard the majority of the bacon grease from the pan while still leaving a little leftover. In same pan with bacon grease, over medium low heat, add 1 tablespoon BACI Kitchen EVOO. Allow oil to become warm, then add sliced brussels sprouts. Sauté them in bacon grease and oil with a pinch of salt for about 8 minutes – or until edges are golden brown.

3. In a large salad bowl, add arugula, warm brussels sprouts, bacon bits, apple splices, dried cherries and drizzle with BACI Kitchen's Lemon Mustard vinaigrette. Toss salad and enjoy.

NOTES: You can mix things up with more toppings like: avocado slices, pears, chopped nuts or feta cheese. 

Make it vegan. Don't want bacon? No problem. Swap it out with a "salty" ingredient like: roasted and salted nuts such as walnuts, almonds, pecans or hazelnuts.

If desired, preheat the Lemon Mustard sauce in a microwave safe bowl for 30 - 60 seconds.
