BACI KITCHEN MEDITERRANEAN 7-LAYER DIP (THIS ONE IS GREAT FOR PARTIES)
This recipe is perfect for those who want a less greasy, carb-y, sugary diet. We're giving the usual Mexican layer dip a Spanish spin with punchy flavors like sliced kalamata olives, chopped mint and a harissa/Greek yogurt combo. This dish is great for parties.
2 containers traditional hummus
1 cup plain Greek yogurt
4 tablespoons harrissa sauce
1 red bell pepper, diced
1 cup cucumbers, diced
1 1/2 cans artichoke hearts, drained and chopped
3/4 cup kalamata olives, chopped
Feta cheese, to taste
BACI Kitchen EVOO, to taste
Fresh parsley and mint, roughly chopped
1. In a medium clear baking dish, spread an even layer of hummus. Whisk Greek yogurt and harissa together and carefully spread over the layer of hummus.
2. Sprinkle artichoke leaves and hearts across the dish, followed by olives, cucumber, bell pepper, and feta cheese. Drizzle BACI Kitchen's EVOO on top.
3. Finish the dish with a sprinkle of parsley and mint. Serve with warm pita chips.
NOTES: Use an offset baking spatula to help evenly spread the layers without combining them into one another too much.
WINE PAIRING: We like a good Riesling, Sauvignon Blanc or even Pinot Grigio with this delicious, healthy recipe.
